Eco-fixers: How to make a Vegan Mug Cake

While the ethics of being vegan can be debated on, it’s environmental benefits are scientifically unarguable. As we have mentioned in one of our previous Eco-Fixers, cows, a major source of dairy, produce huge amounts of methane, a gas 30 times more powerful than carbon dioxide. Meat has a significant carbon and environmental footprint as well, with every kilo of beef produced requires around 15,400 litres of water, according to a report from UNESCO’s Institute for Water Education.

To encourage you to take one step further towards sustainability, we started Eco-Fixers. Today’s DIY is a super easy-to-make, moist mug cake recipe from our friend at @cookwithdiya. This cake is quick, better for your planet and delicious. Need we say more?

Ingredients:
1/4 cup all-purpose flour
1 tablespoon cocoa powder
1 teaspoon baking powder
1 1/2 teaspoon baking soda
1 1/2 tablespoon of vegan mayo
5 tablespoon powdered sugar
A pinch of salt
A handful of vegan chocolate chips
 
Method:
Sieve and mix the all-purpose flour, cocoa powder, baking soda, and salt together in a mug. 
Add the vegan mayo (the secret ingredient) with the powdered sugar and mix the mug well with a spoon. 
You want to be sure to not overmix the batter, just enough so the ingredients are well combined without lumps.
Add a handful (or more) of the vegan chocolate chip.
Pop it in the microwave for 2-3 minutes or until fully baked.
